Subject: [PATCH] ci(linux): update server-version matrix to 26.9, 26.8, 26.7,
 26.3 + head

Keep the ClickHouse server coverage on the support policy: the 3 latest
series plus the last 2 LTS series plus head.

- Add 26.9 (latest stable).
- Remove 26.6 (no longer in the 3 latest series).
- 26.3 and 26.8 stay as the last 2 LTS series.

CI-only change; no client behavior changes.
