Update Current User Profile Endpoint

Description:
Allow users to update their own profile information.

Tasks:

• Create PATCH /api/users/me
• Require authentication
• Allow updating: fullName, walletAddress
• Validate wallet address format for Stellar (G... 56 chars)
• Prevent updating email, role, or kycStatus through this endpoint

Acceptance Criteria:
User can update allowed fields; restricted fields are ignored.
