[Docs] Add guardianIntercept.target field to Buff Interceptions docs

Changes

• docs/combat/interceptions.md: Added the missing target field to the guardianIntercept structure. This field controls which portion of incoming damage a guardian intercepts:
  • 'all' (default): intercepts pre-barrier (legacy behavior)
  • 'healthOnly': intercepts damage that reaches HP after barrier and other reductions

• Commit 088bfd7ff — feat(guardianIntercept): add target option for hp/shield scoping — added target?: 'all' | 'healthOnly' to the guardianIntercept config in src/types/buff.ts, enabling mods to build guardians that do not interfere with barrier-gated effects.
