Subject: [PATCH] Docs(readme): the install commands point at server 2.56.0

Server 2.56.0 is published with its Docker image (2.56.0, 2.56 and
latest), so the binary instructions download that release and the
Docker examples pin its minor. The upgrade guide's own examples keep
naming 2.51 as the tag a running install might still be on.
