docs: note that sorted results come from the Videos tab

Adds the Shorts nuance to the README and the two reference docs. Sorted
results read YouTube's Videos tab, which is long-form only, so Shorts are
reached through tab=shorts instead.

Scoped to this merge-only repo's doc surfaces. skills/youtube/SKILL.md stays
on the clean founder copy.

Docs only, no version bump.
