[RFC]: Remove the ability to rebuild the docs from branch `alma-linux-9`

Being that the branch alma-linux-9 only contains AL 9 docs, we need to make sure that we do not accidentally overwrite the docs generated from the branch alma-linux-10 (which contains docs for both AL 9 & 10).
Branches other than the default one should not have /docs and the docs-build worflow.
When the next AL is released, we will do the same with the current branch.
