[docs] - Fix hover color on side nav bar in dark mode

Current Behavior

When hovering over the right nav bar in dark theme, the items are highlighted are in a dark color. This makes it very hard to read the item name.

Desired Behavior

Make it so that when hovering over the items they are highlighted in a light color, easy to read.

PR Acceptance Criteria

• Build the docs site locally and test it out to see if the desired behavior is achieved.
• Attach proof, such as a screen shot/demo of the new behavior.
