Investigate whether we want to install Pandoc from EPEL

This may be a stupid question. But why not install pandoc using package manager?

As mentioned in the comment the base image repositories don't have the pandoc package available.

Except for the security aspect (which is important) I'm not sure using the rpm from EPEL will bring in a lot of benefits, since the rpm will bring in a bunch of other rpms, which I don't know if it will impact anything else (probably not).
