Update: Installation change for "Introducción a Topic Modeling y MALLET" and "Getting Started with Topic Modeling and MALLET"

Upon using our lesson "Introducción a Topic Modeling y MALLET" for a workshop (testing it beforehand), our good friend @Gimena sent us a note indicating that there has been some changes in how to install MALLET on Windows. She also kindly share her notes with us so I will take the time to "merge" this new version onto the existing lessons - in Spanish first - and try out the installation process in Mac, in case it has also changed.
