Update Connect documentation for Trixie

Specifically:

* Update all the screenshots of Raspberry Pi OS (including those taken
  via Connect) to use Trixie
* Update references to the purple icon which is now blue and rotates in
  Trixie
* Add a new section describing how to disable the animated icon
