Resource Class Parameter and MacOS Executor

CircleCI Support does not need to enable the resource_class parameter as everyone has access to the resource class that their plan allows.

@henna90 I believe you can already override the resource_class. What's the problem you are running into?

This PR is essentially stale and the macos.x86.medium.gen2 has already been deprecated since June 2024.

Practically this PR needs to be reworked with upgrade version across the board:

• node_version
• xcode_version
• resource_class

Right now changing only the resource_class won't work because the combination between all three variables needs to be changed at the same time per this table.
