Support Windows + Mac

Only the Linux LWJGL natives are added as a runtime dependency.

Either rely on the end user to pull in LWJGL + natives for their operating system, or build and publish separate packages (lambda-windows, lamba-linux, lambda-macos) each with the correct natives.
