feat(sdk): add support for AI SDK v6

- Update peer dependency to allow ai@^6.0.0 alongside v4 and v5
- Update devDependencies to use ai@^6.0.0 for testing
- Make convertAISchemaToTaskSchema async to handle PromiseLike validation in v6
