Switch to Prisma as ORM/ODM solution.

All code that uses the raw MongoDB Node.js driver will be replaced with Prisma to easily maintain the code that interacts with the database. Some new features with Simpl:API Studio already started using Prisma, main focus will be on migrating old code that uses MongoDB. Nodejs driver.
