Addresses #114.

Changes:

• makes each VisualProfileDefinition own canonical/reset tuning as well as normalization;
• resolves VisualProfileManagementService.UpdateTuning through the target profile's registered transform definition;
• removes the editor's hard-coded Soft Invert reset label and reset values;
• adds a test-capable catalog constructor without introducing another registry or plugin framework;
• adds a test-only second editable transform proving that update normalization and editor reset use its own definition;
• preserves the existing Soft Invert defaults, numeric clamping and persisted values;
• documents VisualProfileDefinition as the tuning authority.
