Overview
Removes reliance on TokenListController.state.tokensChainsCache in app code and test fixtures, updating mocked controller state used by Bridge/Perps/TransactionElement tests to match the new TokenListController shape.

This refactor drops the tokensChainsCache field from mocks and adjusts token-lookup logic/tests accordingly so the suite continues to pass after the cache removal.
