[Other] Introduce "latest" docker image tag #4428
Description
Feature request: Presently, the docker image tags (as listed here) contain the actual version number, i. e.: 0.2.7-rocm-gfx120x
It would be useful (especially for docker compose) if a tag pointing to the latest image version could be introduced, i. e.: latest-rocm-gfx120x

That tag exists:
ghcr.io/niko1221/strata:latest-rocm-gfx120x(andlatest-cuda12,latest-cuda13,latest-rocm-gfx110x,latest-rocm-gfx1151,latest-sycl). It looked stale because no images were built after 0.2.3. The 0.2.7 images are now published for all six flavors, and eachlatest-<flavor>points at the same image as0.2.7-<flavor>. https://github.com/Niko1221/Strata/blob/main/docs/DOCKER.md describes the tags.
