feat(notebook): memory documents panel and drop evidenceText - #184

This commit removes the evidenceText property from various types and functions related to evidence handling in the chat domain. The changes include updates to the EvidenceLedgerSnapshot, MutableLedger, and related test files, ensuring that the codebase no longer relies on evidenceText, streamlining evidence management.
