We'd like to use this software with an actual industrial touch screen, which unfortunately has limited resolution.

It would be nice if the UI could adjust itself to fit smaller screen sizes.
Describe alternatives you've considered
The window has a limit on its minimum size. Some window manages like Plasma can force a smaller size. It also works out of the box in LightDM (like a kiosk). When doing this the layout breaks, but it can be fixed by zooming out. However, the buttons and sliders become tiny and hard to use by touch input.
