updating base images version and switch to voxpupuli r10k image

Short description

Fixes #8

Updates all container versions to most current available versions for security/performance fixes, bumps the minor version to 10.1.0 and appversion to match the server version

note that the jmxexporter container version is untouched at this time - looks like bitnami has moved to SHA based image tags which are harder to correlate to the actual software versions, if anyone actually uses this and can suggest a better image and/or correct version to use
