fix: update dependencies flagged by Dependabot - #93

- axios 1.18.1 -> 1.20.0 and fastify 5.12.3 -> 5.12.5 (direct). - Raise the overrides for fast-uri (>=4.1.5) and brace-expansion (>=5.0.12), and add fast-copy (>=4.1.0) and source-map-js (>=1.2.2), which only come in through other packages (pino-pretty, vitest). pnpm audit reports no known vulnerabilities.
