docs: format Markdown table separators in the style PyCharm expects - #99

PyCharm's table inspection accepts |-----| separators, where the dashes also fill the cell padding, and flags | --- | separators. Reformat every table in the tracked Markdown files to that style. Only padding and dashes change. A check with whitespace, dashes and pipes stripped shows the cell text is identical.
