build(release): ship checksums; docs: draw the field-kit boundary - #1

This is the most exposed repo in the kit (public, 14 stars) and yet has no release at all - the release workflow exists but no tag was ever pushed, and it publishes without checksums. Adds SHA256 sums per artifact, documents that tagging produces a draft, and marks where the mem/oom/throttle field kit ends and oomtale/stealsense begin. pstax mem stays canonical by design.
