ci(macos): pin setup-beam ImageOS to macos26 on the xcode-27 runner - #15

The xcode-27 image reports ImageOS=macos27, which setup-beam v1.24.1 (the latest release) cannot map, so the macOS release job failed before installing Erlang/Elixir. Point it at macos26, the newest supported target. Co-Authored-By: Claude Sonnet 5.5 <noreply@anthropic.com>
