feat: improve interface and add poetry

This commit removes the slashes from MOD_DESC associative array variables inside setup-2026.sh since gum choose doesn't handle them perfectly (it collides with its search functions and splits) and instead uses clean strings. It also implements an installation module for poetry using its official installation script and adds it to the default modules array for full and ai-dev profiles as a useful modern 2026 CLI tool.
