This PR is based on the original contribution commit from @AlainKnaff in PR591 👏, which adds support for multiple track segments when pausing/resuming GPS tracking. This PR rebased it to develop, solved the conflicts, and added refactoring to keep the code consistent and add a unit test to make the PR more robust.
