Align the entitlements example with the new thesis - #179

PR 178 rewrote business/thesis.md, removing the "Who pays" section the example tiers named, so test_every_tier_names_the_thesis_row_it_tests failed on main. The tiers now name the new sections and add practice and developer tiers; the capped free hosted book is the trial tier. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
