300 seconds is the minimum timeout recommended by the spec for accessibility reasons.
Most platforms will even clamp to a minimum of 300s, even if the RP requested a shorter timeout. This clamping behavior can be set by consumers after parsing, so I think it's sufficient just to set the default here.
