Documentation changes

Adds a "Collapse playground sections" section to the OpenAPI setup page documenting the new operation-level x-mint.playground.expandSections setting, which lets spec authors collapse API playground request sections by default.

Depends on the feature implementation in mintlify/mint#10537 (CUS-1758).

Overview
Adds a Collapse playground sections subsection under OpenAPI x-mint customization on openapi-setup.mdx, documenting operation-level x-mint.playground.expandSections: false so request areas (Authorization, Headers, Query, Path, Body, Server) start collapsed instead of expanded.

Includes a JSON example on a GET /users operation and notes that sections stay expanded when expandSections is omitted.
