docs(rtd): install docs dependency group in RTD build - #2860

modflowpy#2809 moved the docs requirements from the `doc` extra to a `docs` dependency group, but .readthedocs.yml still installed `.[doc]`. The extra no longer exists, so RTD installed bare flopy and the build failed importing yaml in conf.py (and got unpinned sphinx). Override the install job to install the `docs` group (needs pip >= 25.1). Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>

#2809 moved the docs requirements from the
docextra to adocsdependency group, but.readthedocs.ymlstill installed.[doc]. This broke the RTD build.
