Test data should match spec example files #72

Right now we have very limited test data, which is an oversight. I noticed during #71 that we only have files marked "minimal" and claim to only use required values. This matches the intent of the minimal examples from https://github.com/ossf/security-insights/tree/main/examples

Our tests should cover all cases, not just the minimal.
