fix: disable speed stepper for zoom transitions - #177

Zoom has no Slow/Fast API variants, so changing the speed control produced invalid values that failed clip schema validation. No-op and disable the stepper for effects without speed variants, and never append Slow/Fast when rebuilding zoom.
