chore: Upgrade stackable-operator to 0.110.1

Part of stackabletech/issues#844

Bump stackable-operator to 0.110.1 and snafu to 0.9:

• Replaced the untyped HashMap<String, HashMap<String, String>> config overrides with a typed HbaseConfigOverrides struct that only accepts hbase-site.xml, hbase-env.sh, ssl-server.xml, ssl-client.xmland security.properties.
